Marble Cake

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the doughs

  1. In a bowl, mix the red food coloring with enough plain cake dough to make it bright red.

  2. In another bowl, mix the same amount of plain cake dough with melted chocolate.

Layer and bake

  1. Fill a paper-lined square pan half full with plain dough.

  2. Make four deep furrows in the dough and fill them alternately with red and chocolate mixtures.

  3. Cover with another layer of plain dough and smooth the top.

  4. Bake in a slow oven at 300°F (150°C) until done.

What each ingredient does

Melted chocolate
Adds chocolate flavor and a darker colour to the swirled batter.
Red food coloring
Gives one portion of the batter its bright red colour, creating the contrast.

The step that matters

Layering the furrows. Filling the furrows alternately and covering them with plain dough keeps the red and chocolate batters separated, so the marbling shows clearly after baking rather than blending into a single muddy colour.
