Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. In a large bowl, combine chopped beef, crushed crackers, melted butter, sweet cream, eggs, salt, black pepper, marjoram, and nutmeg. Mix all ingredients thoroughly and shape into rolls, pressing firmly.

Roast

  1. In a roasting pan, heat the larding pork over medium heat until light brown.

  2. Add the beef rolls to the pan and roast in a 350°F (175°C) oven for 1.5 hours, basting with butter and water.

  3. Turn the rolls when browned on one side.

Serve

  1. Once cooked, cut into thin slices, garnish with parsley, and serve cold.

What each ingredient does

Lean beef
Forms the main body of the rolls and gives them their meaty structure.
Crackers
Absorb liquid and help bind the beef so the rolls hold their shape.
Eggs
Bind the mixture and help it set firmly when cooked.
Melted butter
Adds richness and moisture and helps the surface brown during roasting.
Sweet cream
Adds moisture and softness to the beef mixture.
Larding pork
Adds fat to the pan, helping the rolls brown and keeping them moist.

The step that matters

Pressing the rolls firmly. Firm shaping removes air pockets and packs the ground meat and binders together, so the rolls hold their shape when sliced and do not crumble during roasting.

Swap the marjoram

The recipe marks marjoram as optional. How well each one fits the dish's main ingredients (beef, butter, cream, egg, pepper, nutmeg, pork):

  1. Parsleyfits about as well
  2. Cinnamonfits about as well
  3. Tarragonfits about as well
  4. Marjoramthe original

Fit is the average pairing score against beef, butter, cream, egg, pepper, nutmeg, pork. Candidates are from the same food group and used in at least 100 recipes.
