Canning and Preserving
Ingredients
Directions
Pack the fruit into jars.
Make a syrup using sugar and water, following the proportions for different fruits.
Fill the jars three-quarters full with boiling syrup.
Place the covers on without rubbers and do not screw them tight.
Put the jars on a rack in a boiler of tepid water, reaching nearly to the necks of the jars.
When the water boils, cook according to the recommended time.
Remove the jars, take off the covers, and fill to the brim with extra boiling hot syrup.
Put on the rubbers and screw the covers on tightly.
Turn the jars bottom upward to check for leaks.
