Why it works: Parsley and sage match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,445 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Roast Turkey

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Dress the turkey carefully and stuff it with bread crumbs mixed with salt, pepper, poultry seasoning, parsley, sage, butter, and onion.

  2. Sew up the openings in the skin and place the turkey in a pan.

  3. Rub the turkey with butter and dredge with salt, pepper, and flour.

  4. Roast in a hot oven at 400°F (200°C).

  5. When the flour is brown, add ½ cup of water.
