Ingredients
- 1 quart of milk
- 4 eggs
- ½ cup rice
- ¾ cup sugar
- 1 tablespoon butter
- a handful of seeded raisins
- 1 pint of unboiled milk
- nutmeg (for topping)

Soak the rice in 1 pint of milk for 1 hour.

Heat the saucepan with the soaked rice until it slowly comes to a boil, then boil for 5 minutes and let cool.

Beat the egg yolks, then mix in the sugar and butter.

Add the cooled rice and the milk it was cooked in, along with 1 pint of unboiled milk, beaten egg whites, and raisins.

Grate nutmeg on top and bake at 350°F (175°C) for 45 minutes.

Serve cold.
