Ingredients

Directions

The book gives no oven temperature. The 350°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare the turkey

  1. Wash the turkey thoroughly, then wipe it dry.

  2. Rub the inside of the turkey with coarse sea salt.

Make the oyster stuffing

  1. Mix stale bread crumbs, melted butter, salt, pepper, and herbs, then moisten with hot water.

  2. Combine the bread crumbs with drained oysters, melted butter, and an egg.

  3. Add sweet milk if the oyster stuffing is too dry.

  4. Stuff the turkey with alternating spoonfuls of stuffing and oysters without crowding.

Truss and roast

  1. Sew up the openings of the turkey.

  2. Tie or skewer the legs and wings.

  3. Rub the turkey thickly with butter and salt.

  4. Dredge the turkey with flour.

  5. Place the turkey in a dripping pan with ½ cup of water.

  6. Cover with another pan for the first 40 minutes in a moderate oven (350°F/175°C).

  7. Baste the turkey frequently.

  8. Turn the turkey to ensure even cooking.

  9. Cook the turkey until tender, moist, and golden brown.

What each ingredient does

Turkey
Forms the main body of the dish and cooks into tender, juicy meat.
Butter
Adds fat and richness, helping the skin brown and the meat stay moist.
Stale bread
Provides the bulk and structure of the stuffing, absorbing moisture and flavor.
Oysters
Contribute a briny, savoury flavour to the stuffing.
Egg
Binds the stuffing so it holds together when cooked.
Flour
Dusted on the skin to help it brown and crisp during roasting.

The step that matters

Covering the turkey for the first 40 minutes. Covering traps steam and heat so the bird cooks through gently, then uncovering lets the skin brown and crisp. Basting and turning help the meat cook evenly and stay moist.
