Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the almonds

  1. Pour boiling water over the almonds to remove the brown skin.

  2. Dry the almonds in the oven, then cool and pound them into a paste.

Shape and bake

  1. Beat the egg whites and sugar until stiff, then mix with the almond paste using the back of a spoon.

  2. Roll the mixture into small balls the size of a nutmeg and place them on white paper an inch apart.

  3. Bake in a cool oven at 300°F (150°C) until light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the macaroons their airy structure.
Powdered sugar
Sweetens the mixture and stiffens the whipped egg whites.
Sweet almonds
Provide the main flavor and the paste that forms the body of the macaroons.

The step that matters

Folding the almond paste into the egg whites. Stirring with the back of a spoon keeps the air in the stiff egg whites. Overmixing deflates the foam, so the macaroons bake up dense and flat.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
