Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whipped into stiff peaks, it forms the light, airy body of the dessert.
Egg whites
Whipped into a stiff foam that gives the filling lightness and structure.
Gelatine
Sets the liquid filling so it holds its shape when chilled.
Powdered sugar
Dissolves easily into the egg whites, adding sweetness and stabilising the foam.

The step that matters

Strain the dissolved gelatine into the egg mixture while stirring constantly. Gelatine that meets cold mixture sets in threads or lumps instead of blending evenly. Stirring while adding it disperses the gelatine so the filling sets smooth.
