Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Brown the chicken

  1. In a large pot, heat oil over medium heat.

  2. Add chicken pieces and brown on all sides.

  3. Remove chicken and set aside.

Build the stew

  2. Stir in diced tomatoes, chicken broth, and Cajun seasoning.

  3. Return chicken to the pot and bring to a boil.

  5. Add okra and cook for an additional 10 minutes.

  6. Season with salt and pepper to taste.

  7. Serve over cooked rice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein and flavor base as it browns and then simmers in the broth.
Onion
Softens and releases sweetness, building the aromatic base of the stew.
Celery
Adds aromatic savory depth to the vegetable base as it softens.
Okra
Adds body and thickens the stew as it cooks, along with a mild vegetal flavor.
Diced tomatoes
Add acidity and liquid that help build the sauce's flavor.

The step that matters

Browning the chicken. Browning creates deep flavors through the Maillard reaction on the chicken's surface. Crowding the pot or stirring too early prevents proper browning and leaves the stew tasting flat.

Swap the clove
