Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites provide the structure that holds the filling, and the cooked yolks make the rich filling.
Dry mustard
Adds a sharp, pungent flavour that balances the richness of the yolks.
Cold chicken, ham, or tongue
Adds savoury meat flavour and a little extra body to the yolk filling.

The step that matters

Fry in boiling oil until browned. For home use, the coated eggs must be fried in hot oil long enough to brown the breadcrumb coating. Oil that is not hot enough lets the coating absorb grease and turn soggy, while the filling inside is already cooked.

Swap the mustard
