Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pecan or hickory-nut meats
Provide the main nutty flavour and body of the cream once pounded into a pulp.
Sugar
Sweetens the cream and lowers the freezing point, keeping it softer when frozen.
Rich milk or cream
Adds fat and richness, giving the frozen cream a smooth, creamy texture.
Burnt sugar
Colors the cream a coffee and cream shade and adds a slight caramel aroma.

The step that matters

Beat smooth with a spatula. Beating during freezing breaks up ice crystals and incorporates air, which keeps the texture smooth rather than grainy.
