Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped whites add air and light volume, helping the cream thicken and turn white as it heats.
Egg yolks
Yolks thicken the cream as they heat and add richness and a smooth, custard-like body.
Sugar
Sugar sweetens the cream and helps balance the sharpness of the citrus juice.
Oranges
Orange juice supplies the main citrus flavour and acidity to the cream.

The step that matters

Stir over gentle heat until it boils. Egg yolks can curdle or scramble if they get too hot too quickly. Gentle, constant stirring keeps the mixture smooth as it thickens.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
