Cream Fueling

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the pastry

  1. Preheat the oven to 350°F (175°C).

  2. Sift the flour.

  3. Mix the flour with sugar and butter.

  4. Cut the butter into the flour until no lumps remain.

  5. Add the beaten egg yolks and stir until smooth.

Shape and bake the crusts

  1. Divide the mixture into halves, form into balls, and flatten each on a board.

  2. Roll out each piece into a round shape, leaving a ½ inch border around a layer cake tin.

  3. Trim the border and press the center into the tin.

  4. Moisten the edge with egg wash.

  5. Bake until golden brown, pricking the center with a fork if it rises.

Make the custard and fill

  1. In a double boiler, heat the milk.

  2. Beat the yolks until light, then mix in sugar and flour.

  3. Stir into the boiling milk until thick.

  4. Remove from heat and add vanilla.

  5. Fill the baked crusts with the mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream or milk
Forms the liquid base that thickens into the custard filling.
Egg yolks
Thicken the custard as they set with heat and add richness.
Flour
Helps thicken the custard and gives the filling body.
Granulated sugar
Sweetens the filling and helps keep the custard smooth.
Vanilla
Adds aroma to the custard filling.

The step that matters

Stirring the custard into the boiling milk. Egg yolks thicken as their proteins set with heat. Stirring constantly spreads the heat evenly, which prevents lumps and curdling as the custard turns thick.

Swap the vanilla

How well each one fits the dish's main ingredients (cream, egg, sugar, flour):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against cream, egg, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
