Why it works: Allspice and mustard match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 1,928 recipes. Both carry methyleugenol, which smells clove, spice. The science ↓

What each ingredient does

Small cucumbers
Form the pickles themselves, becoming crisp and firm as they cure.
Cider vinegar
Provides the acidity that preserves the cucumbers and gives the pickles their sour flavour.
Coarse sea salt
Draws water out of the cucumbers and seasons the pickles.

The step that matters

Covering the cucumbers completely with hot vinegar. Any cucumber left above the liquid can spoil or mould, since air exposure allows microbial growth. Keeping every piece submerged in acidic liquid helps the pickles keep safely.

Swap the cucumber

How well each one fits the dish's main ingredients (pepper, allspice, mustard, cider, vinegar):

  1. Horseradishfits better
  2. Shallotfits about as well
  3. Radishfits about as well
  4. Cucumberthe original

Fit is the average pairing score against pepper, allspice, mustard, cider, vinegar. Candidates are from the same food group and used in at least 100 recipes.
