  2. Add salt, cayenne pepper, mustard, vinegar, and sweet oil to the mashed yolks.

  3. Mix in the raw egg yolk or cream until smooth.

  4. Pour the dressing over the chicken and celery, and mix well with a fork.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chickens
Provide the cooked meat that forms the bulk of the salad.
Celery
Adds crisp texture and a fresh, watery crunch against the soft meat.
Hard-boiled egg yolks
Mash into the dressing to make it rich, thick, and smooth.
Made mustard
Adds sharp flavour and helps emulsify the oil into the dressing.
Sweet oil
Carries fat and richness, giving the dressing a smooth, silky body.
French vinegar
Adds acidity that brightens the dressing and balances the rich oil.

The step that matters

Mix in the raw egg yolk or cream until smooth. Oil and vinegar separate unless the dressing is emulsified. Mashed yolk and mustard hold the oil in tiny droplets, and beating in the raw yolk or cream helps keep the dressing smooth rather than greasy and split.

Swap the celery

How well each one fits the dish's main ingredients (chicken, egg, pepper, mustard, vinegar):

  1. Tarragonfits better
  2. Dillfits better
  3. Capersfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, egg, pepper, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
