Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chickens
Provides the main body of the salad as tender, cooked meat.
Celery
Adds crisp texture and a fresh, mild crunch against the soft meat.
Hard-boiled egg yolks
Form a smooth, rich base that thickens the dressing.
Made mustard
Adds sharp flavor and helps emulsify the oil into the dressing.
Sweet oil
Provides fat that carries flavor and gives the dressing a smooth, creamy body.

The step that matters

Mixing the dressing until smooth. Adding the oil slowly while blending keeps it emulsified with the yolks and mustard; if added too fast, the dressing can split and look greasy.

Swap the celery

How well each one fits the dish's main ingredients (chicken, egg, pepper, mustard, vinegar):

  1. Tarragonfits better
  2. Dillfits better
  3. Capersfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, egg, pepper, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
