Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Semi-sweet chocolate
Melts into the base and provides the rich chocolate flavor and smooth body.
Philadelphia cream cheese
Adds creaminess and tang that softens the fudge texture.
Confectioners' sugar
Dissolves into the mixture to sweeten and firm up the fudge.
Raisins
Add chewy texture and natural sweetness throughout the fudge.
Chopped nuts
Add crunch and contrast to the soft, creamy base.

The step that matters

Remove from heat before beating in the cream cheese. Melted chocolate can seize or turn grainy if overheated, and cream cheese blends smoothly only into warm, not scorching, chocolate. Taking the pan off the heat first keeps the mixture silky.

Swap the raisin

How well each one fits the dish's main ingredients (chocolate, cream cheese, sugar, vanilla, nuts, butter):

  1. Coconutfits better
  2. Bananafits better
  3. Pineapplefits better
  4. Raisinthe original

Fit is the average pairing score against chocolate, cream cheese, sugar, vanilla, nuts, butter. Candidates are from the same food group and used in at least 100 recipes.
