Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. In a large bowl, mix the wheat flour, baking powder, salt, and sugar.

  2. Add the finely chopped walnut meats and mix well.

  3. Gradually add sweet milk until a stiff sponge forms.

Shape and bake

  1. Divide the mixture into two loaves and place in pans.

  2. Let the loaves rise for 30 minutes.

  3. Bake in a preheated oven at 350°F (175°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Wheat flour
Forms the main structure of the loaf as its proteins and starches set during baking.
Baking powder
Releases gas in the batter so the loaves rise without yeast.
Walnut meats
Add richness, body and a nutty flavour to the crumb.
Sugar
Adds sweetness and helps the crust brown during baking.

The step that matters

Adding the milk gradually. Too much liquid at once makes the batter slack and the loaves dense or flat. Adding milk slowly lets you stop at a stiff sponge, which gives the baking powder a firm structure to lift.

Swap the walnut

How well each one fits the dish's main ingredients (wheat, flour, sugar, meat, milk):

  1. Almondfits about as well
  2. Walnutthe original
  3. Chestnutfits about as well
  4. Peanutfits about as well

Fit is the average pairing score against wheat, flour, sugar, meat, milk. Candidates are from the same food group and used in at least 100 recipes.
