Why it works: Butter and flour are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Jelly Roll
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Beat the eggs until very light.
Gradually add the sugar, then the milk.
Sift the flour with the salt and baking powder, then add to the mixture along with the melted butter.
Line the bottom and sides of a long, shallow pan with parchment paper.
Spread the batter very thinly and evenly in the pan.
Bake for 12 minutes in a moderate oven at 350°F (175°C).
Remove from the oven and turn the cake onto a paper sprinkled with powdered sugar.
Quickly remove the paper, trim the edges with a sharp knife, and while warm, spread with jelly.
Roll the cake quickly and carefully to prevent breaking.
After rolling, wrap the cake in the paper to maintain its shape.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
