Pound Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter and powdered sugar together.

  2. Add the beaten egg yolks, nutmeg, and vanilla extract to the mixture.

  3. Gradually mix in the flour and rose water alternately.

  4. Fold in the beaten egg whites gently.

Bake and finish

  1. Pour the batter into two greased tube cake pans.

  2. Bake in a moderate oven at 350°F (175°C) for about 2 hours or until done.

  3. Ice with firm icing once cooled.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air and give the cake a rich, tender crumb.
Eggs
Yolks add richness and structure, while whipped whites lift the batter and add airiness.
All-purpose flour
Forms the cake's main structure once its proteins set in the oven.
Powdered sugar
Sweetens the cake and helps create a fine, even texture when creamed with butter.
Baking powder
Releases gas in the oven, helping the cake rise and become light.

The step that matters

Fold in the beaten egg whites gently. Whipped egg whites hold the air that lifts the batter. Vigorous stirring deflates them, leaving a dense, heavy cake.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, sugar, flour, egg, rose, vanilla):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Allspicefits less well
  4. Clovefits less well

Fit is the average pairing score against butter, sugar, flour, egg, rose, vanilla. Candidates are from the same food group and used in at least 100 recipes.
