What each ingredient does

Chicken
Provides the main protein and bulk of the croquette filling.
Bread crumbs
Soaked in broth to absorb liquid and give the filling body and softness.
Eggs
Bind the mixture so the croquettes hold their shape when fried.
Butter
Adds richness and moisture to the filling.
Mushrooms
Add earthy flavor and moisture to the chopped chicken filling.
Chicken broth
Moistens the bread crumbs and keeps the filling tender.

The step that matters

Let the mixture cool before shaping. A warm, soft mixture is hard to shape and may slump or split. Cooling firms the binding from the eggs and crumbs so the croquettes hold their form in the hot lard.

Swap the celery
