What each ingredient does

Heavy cream
Whipped into foam that gives the dessert its light, airy body.
Gelatin
Sets the whipped cream so the filling holds its shape when sliced.
Angel food cake
Provides a light, spongy base that holds the filling in the mold.
Sugar
Adds sweetness and helps stabilise the whipped cream.

The step that matters

Dissolve the soaked gelatin fully before combining. Gelatin must be completely dissolved in hot water and folded in while liquid but not hot; lumps or overly hot gelatin can leave streaks or deflate the whipped cream, so the filling may not set evenly.

Swap the almond

The recipe marks almond as optional. How well each one fits the dish's main ingredients (cream, sugar, gelatin):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits about as well
  4. Nutsfits less well

Fit is the average pairing score against cream, sugar, gelatin. Candidates are from the same food group and used in at least 100 recipes.
