Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pick and wash the goose or turkey thoroughly with cold water.

  2. Place the bird in a roaster and sprinkle with flour, coarse sea salt, and black pepper.

  3. Use strips of onion for goose.

Roast and stuff

  1. Add 1 quart of water, cover tightly, and bake at 400°F (200°C) for 2 hours.

  2. Pour off the broth onto broken dry bread and soak thoroughly.

  3. Stuff the fowl with the soaked bread mixture and return to the oven for 1 hour.

What each ingredient does

Wild goose or turkey
Forms the main body of the dish, providing the meat that is cooked through.
Flour
Dusted over the bird to help form a browned, savory coating during roasting.
Dry bread
Soaks up the broth to form a moist stuffing that absorbs flavor.

The step that matters

Covering the bird tightly while baking. Sealing the roaster traps steam with the water so the lean meat cooks through gently and stays moist rather than drying out in the dry oven heat.

Swap the onion

How well each one fits the dish's main ingredients (turkey, flour, pepper, bread):
