Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and richness, giving the ice cream a smooth, creamy texture.
Maple syrup
Provides sweetness and the characteristic maple flavour, and helps soften the frozen texture.
Egg yolks
Emulsifiers and thickeners that help the custard set smoothly and keep it creamy.
Egg whites
Beaten into the partly frozen mixture to add air and a lighter texture.

The step that matters

Freeze the mixture immediately. Once the custard is combined, it must be chilled quickly so ice crystals stay small and the texture stays smooth rather than grainy or icy.

Swap the almond

How well each one fits the dish's main ingredients (cream, maple syrup, egg, vanilla):

  1. Pecansfits about as well
  2. Almondthe original
  3. Hazelnutfits about as well
  4. Nutsfits about as well

Fit is the average pairing score against cream, maple syrup, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
