What each ingredient does

Dates
Provide the main sweetness and body once softened and swollen by soaking.
Cream or milk
Adds richness and softens the sweetness of the dates.

The step that matters

Soften the dates over boiling water for at least 30 minutes. Gentle, sustained heat lets the dates absorb water and swell until soft. Stopping early leaves them firm and chewy, so they will not blend into a smooth, spoonable texture.
