Baked Leg of Lamb

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cut down the underside of the leg of lamb and remove the bone.

  3. Prepare the dressing by mixing suet, chopped ham, stale bread, eggs, and chopped onion. Season the mixture with salt, pepper, nutmeg, and parsley.

Stuff and bake

  1. Fill the leg of lamb with the dressing.

  2. Place the stuffed leg in a roasting pan and add a small piece of bay leaf for flavor.

  3. Bake in the preheated oven until cooked through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of lamb
Provides the main meat that is stuffed, roasted and carved.
Eggs
Bind the dressing so it holds together when stuffed and baked.
Stale bread
Absorbs moisture and fat to give the dressing a soft, tender body.
Suet
Adds fat that keeps the dressing moist during roasting.

The step that matters

Bake until cooked through. A stuffed joint is thick and the centre of the dressing heats more slowly than the outside. Cooking until fully done, checked with a thermometer, makes sure both the lamb and the stuffing reach a safe internal temperature.

Swap the onion

How well each one fits the dish's main ingredients (lamb, ham, bread, egg, pepper, nutmeg, parsley):
