Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Dress and singe the chicken.

  2. Boil the chicken in enough water to cover until tender.

  3. Save the broth and giblets.

  4. Cut the chicken into small pieces.

  5. Slice the pork thinly.

  6. Fry the sliced pork with the chicken until browned.

Make the gravy

  1. Remove from heat.

  2. Stir in the flour in the same pan until brown and thick.

  3. Add the chicken broth, salt, and pepper.

  4. Pour the gravy over the chicken.

Assemble and bake

  1. Line a deep dish with puff pastry.

  2. Layer in chicken, pork, and sliced potatoes.

  3. Pour in enough gravy to fill the dish.

  4. Sprinkle with parsley.

  5. Cover with a top crust.

  6. Bake at 400°F (200°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main meat, which cooks tender in the boiling water and forms the filling.
Fat pork
Adds rich fat and savory flavor as it browns with the chicken.
Flour
Thickens the broth into a smooth gravy that holds the filling together.
Chicken broth
Supplies moisture and savory flavor that becomes the gravy.
Sliced potatoes
Adds starch and bulk, softening as the pie bakes in the gravy.
Puff pastry
Forms a flaky, crisp lining and top crust that browns in the oven.

The step that matters

Thickening the gravy with flour. Flour must be cooked in the fat until brown and thick before the broth is added. Stirring it smooth prevents lumps, and cooking it out removes the raw starch taste and lets the gravy set properly.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, pork, flour, pepper, potato):

  1. Thymefits better
  2. Garlicfits better
  3. Marjoramfits about as well
  4. Parsleythe original

Fit is the average pairing score against chicken, pork, flour, pepper, potato. Candidates are from the same food group and used in at least 100 recipes.
