Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Clean the chicken thoroughly.

  2. Split the chicken down the back and place it breast up in a covered roasting pan.

  3. Slice the onion and place it under the chicken.

  4. Season the chicken all over with pepper and coarse sea salt.

Bake

  1. Add 2 cups of water to the pan, cover it, and place it in a 350°F (175°C) oven.

  2. Bake for 1 to 1.25 hours, renewing water as necessary, until golden brown.
