What each ingredient does

Stale bread
Forms the bulk of the stuffing and absorbs the liquid, giving it body.
Oysters
Supply the main savory flavor and a tender, briny texture in the stuffing.
Button mushrooms
Add earthy umami flavor and moisture to the stuffing.
Oyster liquor
Concentrates the oyster flavor into the sauce that binds the stuffing.
Cornstarch
Thickens the oyster liquor into a smooth sauce that helps bind the stuffing.
Butter
Adds richness and a rounded, silky mouthfeel to the sauce.

The step that matters

Boiling the thickened sauce. Cornstarch only thickens fully once the mixture reaches a boil, and heating it without boiling leaves the sauce thin. Cooling slightly before blending helps avoid scrambling or separating the cream and butter.

Swap the mace

How well each one fits the dish's main ingredients (bread, pepper, celery, oyster, mushroom, butter, cream):

  1. Parsleyfits better
  2. Thymefits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against bread, pepper, celery, oyster, mushroom, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
