Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the pudding

  1. Preheat the oven to 350°F (175°C).

  2. Beat the eggs, sugar, and salt until light.

  3. Add hot milk, shredded coconut, and cracker crumbs; mix well.

  4. Pour the mixture into a baking dish and bake for 35 minutes.

Make the sauce and serve

  1. For the sauce, cream the butter.

  2. Add powdered sugar, boiling water, flavoring, beaten egg white, and fruit juice; mix until smooth.

  3. Serve the pudding warm with the sauce.
