Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the dressing as they set during gentle cooking, giving it body and richness.
Cider vinegar
Adds acidity that sharpens the dressing and balances the richness of the eggs and butter.
Butter
Adds fat that makes the dressing smooth and rich.
Thick cream
Adds fat and body, making the dressing smoother and softer in texture.
Walnut kernels
Add crunch and a nutty flavour that contrasts with the soft chicken and celery.

The step that matters

Cook the dressing gently over a double boiler. Egg yolks thicken as their proteins set, but over direct or excessive heat they can scramble and turn grainy. Constant stirring and gentle heat keep the dressing smooth.

Swap the celery

How well each one fits the dish's main ingredients (chicken, pepper, cider, vinegar, egg, butter, cream):

  1. Tarragonfits better
  2. Garlicfits about as well
  3. Thymefits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, pepper, cider, vinegar, egg, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
