What each ingredient does

Mayonnaise
Adds fat and moisture, giving a creamy, rich contrast to the dry toast and fillings.
Fresh tomatoes
Add moisture and gentle acidity that cut through the richness of the ham and chicken.
Butter
Adds fat and flavour to the toast and keeps the bread from soaking up moisture from the fillings.
Plain white bread
Provides the structure that holds the layered fillings together when cut.
