Stuffed Onions

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Select large, smooth white onions and cut the stem end a little above the middle.

  3. Season the onions to taste and bake them with a little water in a pan until tender.

  4. Remove the centers of the onions and fill them with a mixture of dry bread crumbs, chopped meat, pepper, and salt.

  5. Moisten the mixture with sweet cream and the beaten egg.

  6. Top each onion with small pieces of butter.

  7. Return the stuffed onions to the oven and bake until browned.

  8. Serve hot on individual plates garnished with a lettuce leaf and olives.
