What each ingredient does

Wheat meal
Forms the thick body of the porridge as its starch swells and gelatinises in the boiling water.

The step that matters

Pouring in the wheat meal while stirring. Adding the meal slowly while stirring constantly separates the particles so they hydrate evenly, preventing lumps from forming when starch clumps in hot water.
