Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Simmers into the stock that forms the body and flavour of the soup.
Corn starch
Thickens the boiling soup as it cooks, giving it a smooth, body-rich texture.
Sweet cream
Adds richness and a silky, mellow texture to the finished soup.
Blanched almonds
Contribute nutty flavour and a fine, slightly grainy texture to the soup.

The step that matters

Adding the butter and corn starch mixture to the boiling soup. Cooking the starch in butter first and then adding it to boiling liquid helps it disperse evenly. Dropping it in raw or into cool liquid can cause lumps, which are hard to smooth out later.

Swap the onion

How well each one fits the dish's main ingredients (veal, celery, parsley, pepper, butter, corn, cream):
