Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard when heated; whites whip into a stable foam for the topping.
Orange juice
Adds acidity and bright citrus flavor to the custard.
Sugar
Sweetens the custard and the whipped whites.

The step that matters

Stir the custard over boiling water until it thickens. Egg proteins set as they heat, so overheating can curdle the yolks into lumps. Stop heating once the mixture has thickened to keep the custard smooth.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
