What each ingredient does

Green tomatoes
Form the bulk of the pickle, with salting drawing out moisture so they stay firmer.
Vinegar
Provides the acidity that preserves the tomatoes and gives the pickle its sharp flavor.
Sugar
Balances the sharp acidity of the vinegar with sweetness.
Onions
Add savory flavor and aroma to the pickling liquid.

The step that matters

Draining after the first boil. Tomatoes salted overnight and then boiled in vinegar release liquid; draining it off before combining with the fresh vinegar mixture keeps the final pickle from being watery and keeps the brine at the intended strength.

Swap the onion

How well each one fits the dish's main ingredients (tomato, vinegar, sugar, mustard, cinnamon, clove):

  1. Horseradishfits better
  2. Capsicumfits better
  3. Cucumberfits better
