What each ingredient does
- Loose tea
- Supplies the flavor and aroma that infuse into the water during steeping.
- Fresh water
- Carries the flavor compounds out of the leaves during steeping.
The step that matters
Do not allow the steeping water to boil. Keeping the water just below a boil while the tea steeps helps prevent a harsh, bitter taste, since boiling can over-extract tannins from the leaves and dull the delicate aroma.
