What each ingredient does

Raspberries
Supply the main fruit flavor, aroma and color of the shrub.
Vinegar
Adds sharp acidity and draws flavor out of the fruit during standing.
Sugar
Sweetens the syrup and balances the sharpness of the vinegar.

The step that matters

Strain without squeezing. Pressing the cloth pushes pulp and fine solids into the liquid, which makes the strained juice cloudy and can add harsh, bitter notes. Letting it drip keeps the syrup clear and smooth.
