Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Crabs a LA Diable

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat the oven to 400°F (200°C).

  2. Clean and prepare the crabs.

  3. In a pan, melt butter and add cayenne pepper and salt.

  4. Mix in lemon juice and bread crumbs.

  5. Coat the crabs with the mixture.

  6. Place crabs in clam shells or porcelain shells.

  7. Bake for 15-20 minutes until golden brown.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
