Why it works: Bread and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 27,232 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓
Escalloped Oysters
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 350°F (175°C).
Moisten stale bread crumbs with melted butter and season with coarse sea salt and black pepper.
Butter a baking dish and add a layer of bread crumbs to the bottom.
Add a layer of oysters on top of the crumbs.
Repeat with another layer of crumbs and another layer of oysters.
Cover the entire dish with the remaining bread crumbs.
Bake for about 20 minutes, or until the crumbs are nicely browned.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
