Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the tender, meaty body of the salad.
Cucumbers
Add cool, crisp texture and moisture to the salad.
Mayonnaise
Adds fat and creaminess that binds the salad together.
Vinegar
Adds acidity that brightens the flavour of the sweetbreads.

The step that matters

Remove membranes and pull apart into small pieces. Membranes stay tough and chewy after cooking, so they must be removed while the sweetbreads are cool enough to handle.
