What each ingredient does

Potatoes
Form the bulk of the salad and absorb the dressing while staying tender when cooked through.
Mayonnaise
Provides fat and creaminess that coats the potato slices and gives the dressing its body.
Sweet cream
Thins the dressing to a pourable consistency so it coats the potatoes evenly.
Dry mustard
Adds a sharp, pungent flavour that balances the richness of the mayonnaise.

The step that matters

Slowly add sweet cream to the dressing. Adding cream too quickly can thin the mayonnaise unevenly or split it, so adding it gradually and mixing lets you stop at the thin-cream consistency the recipe calls for.

Swap the white pepper

How well each one fits the dish's main ingredients (potato, mustard, pepper, onion, parsley, cream):
