Ingredients

  • ½ pound prunes
  • Juice of ½ lemon
  • 1 pint water
  • 6 tablespoons cornstarch
  • 1 cup sugar
  • ¼ teaspoon salt
  • ½ teaspoon almond extract

Directions

Wash the prunes and soak them overnight.

Simmer the prunes until tender, then remove the pits.

Add enough water to the liquid to make 2 cups.

Mix the cornstarch with the sugar and add to the prunes.

Cook for 15 minutes, stirring frequently.

Add the lemon juice and almond extract.

Dip the mold in cold water and drain.

Fill the mold with the pudding and set aside to cool.
