Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornstarch
Thickens the liquid into a smooth, sliceable pudding as it cooks.
Egg whites
Whipped to stiff foam, they lighten the pudding and give it a delicate texture.
Sugar
Sweetens the pudding and helps stabilise the whipped egg whites.
Egg yolks
Enrich the boiled custard served alongside the pudding.

The step that matters

Pour hot cornstarch mixture over the egg and sugar. Adding the hot starch mixture while beating keeps the whipped whites from deflating and helps the pudding set evenly. Beating until smooth prevents lumps of cooked starch.
