What each ingredient does

Strawberries
Provide the main flavour and fruit body, and sugar draws out their juices.
Cream
Supplies fat that makes the ice cream rich and smooth in texture.
Sugar
Sweetens the base and lowers the freezing point, keeping the ice cream softer.

The step that matters

Adding the strawberries near the end of freezing. Adding the fruit when the mixture is nearly frozen and mixing it thoroughly spreads the pieces evenly. Fully frozen cream is too stiff to blend in, and the sugar in the syrup helps keep the texture soft.
