French Rolls

Ingredients

Directions

  1. Soften the yeast cake in lukewarm water.

  2. Stir in enough flour to make a stiff dough.

  3. Knead the dough and shape it into a ball, scoring the top with two parallel cuts.

  4. Place the dough in a bowl of lukewarm water, cuts upward, and set aside in a warm place.

  5. Once the ball swells and floats, transfer it to a pint of lukewarm water with melted butter.

  6. Add salt and enough flour to make a stiff dough, then knead for 15 minutes.

  7. Set aside until it has risen to twice its bulk, then shape into rolls.

  8. Take small balls of dough, roll them into an oblong shape with pointed ends, and place them on a baking pan.

  9. Let the rolls rise until doubled in bulk, then score the tops diagonally with a sharp knife.

  10. Brush the tops with milk when nearly baked, then return to the oven to finish baking.

    Shared aroma: isobutyraldehyde (malty, green).

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.
