What each ingredient does

Ox tails
Provide the meat and collagen that give the soup its body and rich flavor.
Onion
Adds sweetness and aroma when sautéed in the drippings.
Beef or salt pork drippings
Fat for sautéing that carries flavor and browns the onion and meat.
Celery
Adds aromatic flavor and a fresh, vegetal note to the broth.

The step that matters

Cook slowly for six hours. A gentle simmer lets collagen in the ox tails break down into gelatin, giving the broth body. A hard boil can make the broth cloudy and greasy.

Swap the clove
