Deviled Crabs or Lobster, New Orleans

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove the meat from the crab or lobster and break it into fine pieces.

  2. Mix fine fresh bread crumbs with thin cream to form a soft paste.

  3. Combine the fish with the paste, adding coarse sea salt and black pepper to taste.

  4. Spoon the mixture into shells and top with finely powdered buttered crumbs.

  5. Bake in a 400°F (200°C) oven until browned.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
