Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Choose beef that is bright red, elastic, and has a thick layer of fat.

  2. Heat a pan on the stove until hot.

  3. Sear the meat on all sides using a fork.

  4. Place the meat on a rack in the pan.

  5. Sprinkle the meat with flour, salt, and pepper.

  6. Add 2 tablespoons of drippings to the pan; do not add water.

Roast

  1. Roast in a very hot oven at 400°F (200°C) for 10 minutes.

  2. Reduce the heat.

  3. Baste the meat often with the fat in the pan.

  4. Roast for 10 minutes per pound for rare, or 15 minutes per pound for well done.

Rest and carve

  1. Let the meat rest on a platter with the fat side up.

  2. Carve the meat into thin slices across the grain.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Its fat layer bastes the meat from within and adds flavour and juiciness as it renders.
Flour
Coating the surface helps form a browned crust and thickens the drippings for gravy.
Drippings
Fat in the pan carries heat to the surface and browns the meat during roasting.

The step that matters

Roasting time per pound. Cooking time depends on weight and desired doneness, so overcooking dries the lean meat. Checking doneness early keeps the centre juicy.
